Recipe: Ingredients: 1 large eggplant, cubed 1 cup okra, chopped 1 lb (450g) goat meat, cubed 1 cup plain coconut yogurt 2 tablespoons oil 1 large onion, finely chopped 2 tomatoes, chopped 2 teaspoons ginger-garlic paste 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon turmeric powder 1 teaspoon garam masala 1 teaspoon chili powder (adjust to taste) Salt to taste Fresh cilantro leaves for garnish Instructions: Heat oil in a large pot or pressure cooker over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn golden brown. Add ginger-garlic paste and sauté for another minute until the raw smell disappears. Add coriander powder, turmeric powder, chili powder, and garam masala. Stir well for a minute to toast the spices. Add cubed goat meat to the pot and brown it on all sides. Add chopped tomatoes and cook until they turn soft and the oil starts to separate from the masala. Add cubed eggplant and chopped okra. Stir gently to coat the vegetables with the spices. Gradually add the yogurt to the curry, stirring continuously. Warm the mixture gently for a few minutes. Do not let it boil.
