Is Fat Good or Bad? Asking the Wrong Question
2026/10/12
Share your thoughts Low-fat aisles, olive-oil halos and the organ we forgot we had — why fat was never the villain, never the hero, and what the evidence says to put on your plate. For twenty years fat was nutrition's number one villain. Now olive oil, nuts and avocado are heroes. Same nutrient, opposite reputation — which suggests we've been asking the wrong question. Ashok and Meera look at the fat we carry (an organ that talks to your brain, plus a brown fat that burns energy) and the fat we eat (essential fats, and the vitamins that can't get in without it). Then the evidence: why the low-fat era backfired, what the American Heart Association found, and the PREDIMED trial, where olive oil and nuts beat a low-fat diet for heart health. Do Detox Diets Work? Your Liver Already Has a Plan
2026/10/05
Share your thoughts Juice cleanses, liver flushes and foot pads that turn brown overnight — versus the 24/7 detox system you already own, and the foods that genuinely help it. Co-hosts Ashok and Meera Vasudevan pull up two chairs for a quick chat — evidence-based, a little cheeky, and firmly in the kitchen, never the clinic. This week: the detox industry, and the question it never answers. So they ask the question the detox industry never answers: what exactly is a detox diet detoxing? Then they meet the real thing. The liver — a kilo and a half of a chemical processing plant — works in two steps: tweak the molecule, then attach a little molecular handle (conjugation) so it dissolves in water. Grab it, tag it, ship it. The kidneys filter around 180 litres of fluid a day and ask for nothing more exotic than water. Then the cleanse goes on trial. A 2015 review found no compelling evidence that commercial detox diets remove any toxins at all. Worse, the liver’s ‘handles’ are built largely from protein — so a juice-only cleanse sends the cleaning crew home without lunch. And heavy green-juice cleanses, loaded with oxalate, have landed some people with kidney damage. Finally, the kitchen pharmacy: cabbage-family vegetables that switch on the liver’s own enzymes; a carefully measured study in Qidong, China, that shows the difference between feeding the liver and ‘cleansing’ it; fibre that stops the liver’s work from being ‘returned to sender’; and the grapefruit warning on medicine labels — proof that food genuinely talks to your liver. In this episode ●      Which toxin? The question detox marketing never answers ●      Your liver’s two-step system: grab it, tag it, ship it ●      Kidneys: your entire plasma, filtered about sixty times a day ●      What the evidence says about juice cleanses — and why they can backfire ●      Cabbage family, fibre and water: feeding the cleaning crew ●      Grapefruit and the medicine label: food is chemistry ●      The real detox: take less in — and a teaser for our fatty-liver episode Listen & follow Apple Podcasts · Spotify · YouTube: Pay the Farmer, Not the Pharmacy   ·   Contact: [email protected] Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! Share your thoughts The MUST Test: Raising the Bar on Food A pill must prove it does good. A food additive only has to prove it does no harm. Why? Three weeks of asking what is in your food, and now the question the whole series was built for. Before a medicine reaches you it must prove not only that it will not harm you, but that it actually does something — measured against a placebo, under scrutiny that assumes nothing. A food additive, eaten daily for a lifetime, faces a far lighter test. In the United States a great many enter the food supply under a doctrine called GRAS, “generally recognized as safe,” where the company making the additive often assembles its own evidence and declares it safe. In this finale Ashok and Meera make a proposal that is not “ban the chemicals” — it is change the question. Call it MUST: Minimal, Useful, Safe, Tested. They take the fair objection head-on (who decides what “useful” means, and wouldn’t industry capture the new bar as it shaped the old?), then come home to the one shelf you actually control. Your pantry should be a cook’s workshop, not a miniature of the supermarket aisle. Share your thoughts Food Additives: Banned There, Allowed Here Same chemical, same evidence, opposite verdicts — and the global safety vote that passed sixty-nine to sixty-seven. The same additive is illegal in one country and perfectly legal in another. Not because one set of scientists found harm and the other did not — but because the two are answering different questions. This week Ashok and Meera open the case files: potassium bromate, banned across the EU, UK, Canada, Brazil, China and India and still legal in the United States; titanium dioxide, the bright white in icing, banned in the EU in 2022 and permitted in the US; the nitrites in cured meat, the one genuinely settled item on the tour. Plus a deliberate act of fairness — the exoneration of MSG, the most feared additive of the last half century that turned out to be among the safest. And then the moment the whole series has been walking towards: July 2012, when Codex could not reach consensus on a growth drug in the world’s meat, and so it voted. Sixty-nine to sixty-seven. Seven abstentions. That is how the global definition of “safe” was settled. READ THE LABEL: EPISODE 2 OF 4
2026/09/14
Share your thoughts CODEX: The Committee That Feeds the World A committee in Rome decides what goes into your food — and it was never asked whether any of it makes you well. Last week we turned a packet over. This week we go to Rome — to a building most people have never heard of, housing a committee that quietly decides what may go into food, everywhere on earth. Ashok and Meera introduce Codex Alimentarius: founded in 1963 by two arms of the United Nations, 189 members, and the author of the rulebook behind almost everything in your kitchen. It ended chalk in the flour and water in the milk, and it deserves real credit for that. But read its own stated purpose twice — “protecting consumers’ health and ensuring fair practices in the food trade” — and you find health and trade in the same breath. The operative word is protect. Not promote. In this episode: why a Codex number is a passport rather than advice, the machine that subtracts goodness from food and sells a fraction of it back as innovation, and the startling arithmetic of who actually sits in the room where “safe” gets defined. READ THE LABEL — EPISODE 1 of 4
2026/09/07
Share your thoughts  Food Labels: What’s Really in Your Food? The ice cream that wouldn’t melt — and the question nobody is asking about what you eat. Ashok bought an ice cream bar at a railway kiosk in Wales and made the mistake of turning it over: the first seven ingredients belonged in a kitchen, the next ten in a lab. Then, from Wales to Antigua — where Meera made her own discovery: a strawberry ice cream in a cup that simply refused to melt, sitting there like a mousse, holding its pose long after real ice cream would have surrendered into cream. In this opener of our four-part Read the Label series, Ashok and Meera ask the question nobody official is asking about your food: not “is it safe?” — that’s been answered thousands of times — but “is it good for you?” From an 18-ingredient loaf of bread to the strange comfort of the word “approved,” this is where the story of your label begins. WE ARE WHAT WE EAT— EPISODE 4 OF 4
2026/08/31
Share your thoughts The Kitchen and the Pivot: Pay the Farmer, Not the Pharmacy (We Are What We Eat, Part 4 of 4) The finale begins in the oldest wellness institution on earth: grandmother's kitchen. Turmeric, ferments, whole grains, seasonal vegetables — preventive medicine served three times a day and called lunch. In the closing episode of the series based on Ashok's Substack essay, Ashok and Meera connect that compressed wisdom (via Michael Pollan's famous rule) to the modern evidence — and then make the pivot: an appeal to the food industry itself. Scale and nutrition are not in conflict. Convenience and integrity are not opposites. Drawing lightly on Ashok's four decades in food, this episode argues that community health isn't a constraint on business — it's the foundation of it. Plus: what "pay the farmer, not the pharmacy" actually means, and three evidence-based things you can do this week. 📖 Read the essay that inspired the series: https://ashokv.substack.com/p/we-are-what-we-eat We are what we eat. WE ARE WHAT WE EAT—EPISODE 3 OF 4
2026/08/24
Share your thoughts The Great Decoupling: Sixty Years, One Chart (We Are What We Eat, Part 3 of 4) At the heart of Ashok's Substack essay is a single chart: sixty years of food industry growth — revenue up ~26x, market value up ~100x since 1980 — drawn against sixty years of rising obesity, diabetes, hypertension, and depression. In Part 3, Ashok and Meera read that chart honestly: not as prosecution (correlation isn't causation, and they say so), but as provocation. What changed in the 1970s and 80s, when food science shifted from preserving food to engineering desire? How did the "bliss point" become a business model, and ultra-processed products come to supply over half our calories? And why did nobody decide any of this — yet it happened anyway? The decoupling of business success from community health wasn't a conspiracy. It was ten thousand small optimizations. Which means it might be reversible the same way. 📖 See the chart and read the full essay: https://ashokv.substack.com/p/we-are-what-we-eat We are what we eat. WE ARE WHAT W EAT— EPISODE 2 OF 4
2026/08/17
Share your thoughts The Four Disorders: What Modern Food Does to Us (We Are What We Eat, Part 2 of 4) Obesity, type 2 diabetes, hypertension, depression — four conditions that now define modern healthcare, each with a direct line to the plate. In Part 2 of our series based on Ashok's Substack essay "We Are What We Eat," Ashok and Meera take the four disorders one at a time and follow the evidence: the NIH trial in which ultra-processed diets led people to eat 500 extra calories a day without noticing; how refined carbs wear out the insulin system; why processed food's sodium-up, potassium-down arithmetic raises blood pressure; and the emerging gut-brain science — including the SMILES trial — linking diet and depression. Plus a careful look at additives like emulsifiers, and what the research actually says. One pattern runs through it all: overprocessing. And one reframe: every one of these conditions has a lever in the kitchen. 📖 Read the full essay: https://ashokv.substack.com/p/we-are-what-we-eat Key studies mentioned: •       Hall et al., Cell Metabolism (2019) — NIH ultra-processed food trial •       Jacka et al., BMC Medicine (2017) — the SMILES trial We are what we eat. WE ARE WHAT WE EAT: EPISODE 1 OF 4
2026/08/10
Share your thoughts The Promise: How Food Became an Industry (We Are What We Eat, Part 1 of 4) For 150 years, the food industry was one of civilization's great success stories. In Part 1 of this four-part series — based on Ashok's Substack essay "We Are What We Eat — And What the Food Industry Decided to Feed Us" — Ashok and Meera trace the remarkable arc from Nicolas Appert's 1810 preservation breakthrough, through the rise of the great brands that fed growing cities, to the Codex Alimentarius of 1963 that made food one of the most trusted, regulated industries on earth. This is the story of business and community in genuine symbiosis — the promise the industry made, and kept, for a century and a half. Understanding that promise matters, because in the next episode we ask: what happened when it quietly broke? 📖 Read the full essay: https://ashokv.substack.com/p/we-are-what-we-eat Coming up in this series: •       Part 2: The Four Disorders — obesity, diabetes, hypertension, depression, and the plate •       Part 3: The Great Decoupling — sixty years of data, one uncomfortable chart •       Part 4: The Kitchen and the Pivot — grandmother’s wisdom and the way forward We are what we eat. Cyclospora: Ep 2/2 A little "Heat" goes a long way
2026/08/03
Share your thoughts As always in this series, co-hosts Ashok and Meera Vasudevan pull up two chairs for a fireside chat — evidence-based, a little cheeky, and firmly in the kitchen, never the clinic. This is Part 2 of a two-part special. Part 1 left us with a puzzle: the one thing that would have stopped the Cyclospora outbreak — heat — is the thing the raw-food gospel never mentions. So this episode asks a bigger question. Is raw actually the healthiest way to eat a vegetable? Three witnesses say not so fast. Ayurveda has argued for millennia that cooking is a kind of pre-digestion — kind to your ‘agni,’ your digestive fire. Traditional Chinese Medicine warns that cold, raw food taxes the spleen and stomach and breeds ‘dampness.’ And modern nutrition science, almost sheepishly, agrees on the specifics: cooking makes the lycopene in tomatoes and the beta-carotene in carrots far more absorbable, and tames the oxalates in spinach that block your calcium and iron. The honest answer, as always, is balance — some nutrients do prefer raw. So Ashok and Meera land on a practical rule for the kitchen, not a dogma. Chop it, steam it, sauté it, sear it — meet your vegetables halfway. In this episode ·       Where the ‘raw is purest’ idea came from — and why it’s more marketing than medicine ·       Ayurveda’s case: agni, āma, and cooking as ‘pre-digestion’; and the twist that āma literally means ‘raw’ in Sanskrit ·       Chinese Medicine’s case: the spleen and stomach ‘like it warm,’ and what ‘dampness’ from raw, cold food means in plain English ·       The science that agrees: lycopene, beta-carotene, and the oxalates in spinach that cooking quietly disarms The fair rebuttal — vitamin C, folate and broccoli’s sulforaphane can prefer raw or light steaming — and the practical middle path  Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! Cyclospora: The Salad that bit back. Ep 1/2
2026/07/27
Share your thoughts As always in this series, co-hosts Ashok and Meera Vasudevan pull up two chairs for a fireside chat — evidence-based, a little cheeky, and firmly in the kitchen, never the clinic. This is Part 1 of a two-part special, timed to the 2026 Cyclospora outbreak. First, the basics done properly: what cyclosporiasis is, and how you actually get it — no biology lecture, just the one thing that matters, which is that it rides in on raw food. Then the outbreak: since May, U.S. authorities have confirmed more than 1,600 cases across dozens of states, with thousands more under investigation, traced to shredded iceberg lettuce from one big processor. But the heart of this episode is the part most Western coverage misses. America counts a few thousand cases and the whole machine lights up — headlines, recalls, a share price falls. Meanwhile Cyclospora is endemic across the tropics — India, Nepal, Latin America, Southeast Asia — where it rises and falls with the rains and the real numbers are staggering, year after year, with no headlines at all. The problem is global; the noise is American. So the lesson is a global one: eat salads carefully — only the ones that actually nourish you, and only the ones that haven’t travelled like Columbus. In this episode ·       Cyclosporiasis, defined — and, more usefully, how you actually get it: on raw produce and contaminated water, never off the person next to you ·       Meet the parasite — a protozoan, a bit bigger and stranger than an ordinary germ ·       Prevalence and proportion: America’s few thousand cases made the noise; the tropics carry the staggering numbers quietly ·       The iceberg question, done properly: it’s not the water (watermelon and a tomato are water too) — it’s the empty 5%, and why romaine and arugula run rings around it ·       Why washing won’t save you and heat will — and why the villain is industrial scale, not the vegetable Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! Pharma, Food & the Fluent Consumer- Ep.4/4
2026/07/20
Share your thoughts We read our lunch like a lab report — and feel virtuous about a bar built in a factory while waving off dal and rice as “just carbs.” In the finale of “Off the Treadmill,” co-hosts Ashok and Meera Vasudevan take the third corner of the triangle — us — and show how our own fluency makes us the perfect customer. Then they step off. As always in this series, co-hosts Ashok and Meera Vasudevan pull up two chairs for a fireside chat — evidence-based, a little cheeky, and firmly in the kitchen, never the clinic. The first two corners of the triangle were about them — Pharma and the food industry. This one is about us. For most of history, we judged food by taste, smell, and satiety. Then we learned the language of nutrients, and that vocabulary now sits on every packet. It's useful — and it's also exactly what makes us easy to sell to. The moment a population learns a word, an industry can sell to that word without changing the product at all. In this episode •    Information vs. fluency: how knowing the vocabulary turns you into a target •    “Pork. The Other White Meat” — moving the word instead of the product •    Eating the scorecard: the protein bar vs. the plate of dal and rice •    The “nutrient of the decade” treadmill — and why last year's hero ends up on the discount shelf •    Stepping off: the simple, old-fashioned prescription that closes the series Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! In Episode 3 of 4 in thos series  co-hosts Ashok and Meera Vasudevan take the second corner of the triangle — the food industry — and the verdicts that flip a full 180 degrees within a decade. Eggs, butter, coconut oil… and the peanut reversal whose bill was paid by children.  In this episode •    The egg: 47 years rationed to three a week — on a cholesterol cap with no clinical-trial evidence •    Butter → margarine → trans-fat ban → “butter-style spread”: the consumer left keeping score •    Coconut oil's three verdicts, red wine, and the MSG myth — same molecules, flipped opinions •    Why guidelines outlive the science by a generation •    Peanuts and the LEAP trial: the reversal whose cost was paid by children Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! Share your thoughts In this episode 2/4, co-hosts Ashok and Meera Vasudevan pull up two chairs for a fireside chat — evidence-based, a little cheeky, and firmly in the kitchen, never the clinic. Medical thresholds move — and they almost always move in the direction that creates more patients. In this episode, they walk through the quiet downward drift in the levels of blood pressure, cholesterol, blood sugar, and bone density, and then zero in on the cleanest example of all: vitamin D. In this episode •    Why diagnostic thresholds drift in only one direction — and turn healthy people into patients overnight •    The vitamin-D story: a Western-derived cut-off applied to sunny India, and the 70–90% “deficiency” that followed •    How a new diagnosis becomes a market: supplements on the counter, a test added to every panel •    The quiet 2024 reversal — and why the products never left the shelf •    A fair word for doctors: the line is moved upstream, not in the consulting room Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"!
