A perfectly cooked steak can still be part of a bad pickup.
In this episode of The IncrEDIBLE Discourse, Chef Mark Grigsby breaks down what precision actually looks like when multiple stations, cook times, tickets, and personalities all have to produce one coordinated result.
We get into timing offsets, sequencing a pickup backwards, identifying the anchor item on a ticket, and why firing everything at once usually creates more drag instead of less. Then we take it beyond the individual station and look at what really holds a busy service together: communication.
What does “two minutes” actually mean when another station is building its pickup around your answer? What happens when somebody knows they're behind but doesn't communicate it? How does expo synchronize grill, sauté, fry, pantry, runners, and multiple tables without letting one mistake cascade through the board?
And when something does go wrong, the answer isn't always to move faster. Sometimes the professional move is to reset the synchronization point and rebuild the pickup around the new reality.
Because great service isn't just a collection of talented cooks making great food. It's individual execution synchronized across a team.
