With Christmas on the horizon, we speak to chefs and foodies to discuss and understand why seafood is such a huge part of festive celebrations across Europe, and how we can get more Scottish seafood on UK festive menus. 

In this episode, we take a trip to the Isle of Mull to understand Scotland's shellfish aquaculture sector. We find out more about farmed oysters and mussels, as well as the businesses behind the delicious products. We want to understand the impact on the Scottish economy, and how aquaculture allows Scotland to support demand for its seafood products. 

Scotland's waters are home to some of the world's finest seafood, harvested by Scottish fishermen for generations. Our fishermen and myriad seafood organisations are passionate about preserving this natural resource for the future, so in this episode we speak to the Scottish Fishermen's Federation and the Scottish Pelagic Fishermen's Association to find out more sustainability, and how it is at the heart of Scotland's fishing industry.

Over 60 different species are landed from Scotland's waters, and while we all have our favourites, this episode explores some of the more underutilised species. We'll be talking to chef Jak O'Donnell about the best way to experiment with Scottish fish, and find out about Coley, a native whitefish.
