Plant-Based Living at AHI Foods: Microgreens, Simple Swaps, and Vegan Favorites in Lake Sumter
Host Mike Roth interviews Melissa Guilloty, manager of AHI Foods in Lake Sumter, described as the area’s only pure vegetarian restaurant. Melissa shares how early experiences and later documentaries made her more intentional about food, and how becoming fully vegetarian three years ago improved her skin, energy, mood, and overall wellbeing. She explains that many people feel overwhelmed by nutrition information and benefit most from simple, realistic steps like adding water, color, and greens rather than aiming for perfection. Melissa highlights the nutrition “tiny and mighty” impact of microgreens and AHI’s partnership with Yummy Harvest, a Lady Lake farm that supplies and delivers microgreens. She offers approachable plant-based tips, discusses nuts and produce, shares eggplant “pizza” ideas, and explains tofu-based alternatives to eggs, then recommends menu favorites like a beet poke bowl and the Brazilian smoothie, plus online/app ordering options.

Dr. Sandra Kaufman on the Cellular Drivers of Aging and Practical Longevity Basics
Host Mike Roth interviews Dr. Sandra Kaufman, a longevity medicine leader with backgrounds in cell biology and anesthesiology, about why humans age and how to slow the process. Kaufman explains aging as progressive cellular dysfunction with multiple causes she groups into “seven tenets of aging,” arguing there is no single magic bullet and that mindset, mobility, and addressing pain matter. She recommends starting with basics—fixing underlying medical issues, improving diet and exercise—then layering in tools like supplements, medications, and therapies (saunas, cold, light). She says aging accelerates starting around ages 30–35 as key hormones and pathways decline, but longevity efforts can still improve quality of life. Kaufman highlights NAD precursors (NMN/NR) for energy and DNA repair support, discusses cancer risk as DNA repair failure, and shares her “PANACEA” supplement stack: pterostilbene, astaxanthin, NAD precursor, bioavailable curcumin, and carnosine.

Host Mike Roth opens Season 8 of Villages Vitality: Senior Life Unscripted with guests Mike Summers and Jim Mahoney, two blood cancer survivors, discussing diagnosis, treatment, recovery, and what it takes to live well while aging. Summers was diagnosed with leukemia at 73 after a severe hematoma and two-week hospitalization, then faced major recovery challenges and fear over an $18,000/month drug until finding the same medication for $35/month via Cost Plus Drugs. Mahoney, diagnosed at 83 after years of monitoring smoldering myeloma, describes infusion and pill regimens largely covered by his insurance, staying highly active through competitive softball and gym training, and later receiving immunotherapy after melanoma surgery. Together they explore resilience, diminished physical capacity, purpose, caregiving, long-term goals, and their book, The Long Season, aimed at helping patients and families.

Seniors and AI: Myth-Busting and Practical Tips
AI for Seniors: What It Is, What It Isn’t, and How to Start Using It
Season 8 of Village’s Vitality Life: Senior Life Unscripted opens with Mike Roth interviewing technologist Len Koski about AI for seniors, defining AI as pattern-trained software that generates helpful responses but is not general intelligence and has no will of its own. They discuss everyday AI use (recommendation engines, shopping assistants, autocorrect, voice assistants, GPS) and popular consumer tools (ChatGPT, Copilot, Gemini, Meta AI, Claude, Perplexity), then debunk common myths: AI won’t replace you if you learn it, it doesn’t automatically know everything about you, it isn’t only for young people, and it’s safe to experiment. Practical senior uses include drafting emails, simplifying medical language, planning trips and meals, staying connected, creating captions and thumbnails, learning new skills, and writing poems or songs. They promote two hands-on Enrichment Academy courses in The Villages (beginner TEC 7200 in January; intermediate AI Beyond the Basics 201 Feb–Mar 2027), with device/browser prerequisites, registration options, and workbook resources.

Rebuilding Foot Strength: Dr. Dr. Jonathan Schutza PT on Plantar Fasciitis Recovery and Mindset
Season eight of Village’s Vitality Life opens with host Mike Roth interviewing physical therapist Dr. Jonathan Schutza PT, who specializes in plantar fasciitis and promotes the idea that pain doesn’t mean you’re broken and aging doesn’t require losing movement. Schutza explains how his early work at a Level 1 trauma center and later social media education led him to focus on foot pain after seeing how short educational videos helped many people with outdated guidance. He shares how sobriety and faith shifted his life toward serving others through a science-based helping profession. Schutza says successful recovery depends most on believing improvement is possible and showing up consistently with grit, noting many people quit before results appear. He describes his Foot Capacity System app (launched in May) that tracks daily pain and exercises, emphasizes strengthening over rest/ice/stretching alone, typically takes 15–30 minutes per day, and offers a free seven-session trial at: RebuildMyFoot.com

Professional Hypnosis vs. Stage Hypnosis, Plus a 100-Hour Hypnotherapy Certification Program (with Janet Philbin)
In Season 8 of Villages Vitality Life: Senior Life Unscripted, host Mike Roth interviews hypnotherapist and mental health professional Janet Philbin, who has practiced hypnotherapy for about 26 years and also wrote “Show Up For Yourself: A Guide to Inner Awareness and Growth” (available in print and as an audiobook). Janet explains how stage hypnosis differs from professional hypnotherapy: stage work is entertainment that screens for highly responsive volunteers using quick tests (like arm levitation or balance/leaning techniques), while therapeutic work focuses on healing and change. She discusses hypnosis for issues such as pain management (only after full medical evaluation and with physician coordination), anxiety, sleep problems, procrastination, relationship patterns, and emotional wounds rooted in childhood coping strategies. Janet outlines her typical 3–6 session approach, noting six sessions as a “sweet spot,” and shares details of a live, Zoom-based 100-hour certification training through Krysalis Institute starting January 22, 2027, including schedule, cost, class size limits, and how to enroll.

Beyond MRI: Dr. Bagnell's Approach to Unseen Brain Imbalances
Host Mike Roth opens Season 8 of Villages Vitality: Senior Life Unscripted with Dr. Michael K. Bagnell of Bagnell Brain Center, who treats patients with dizziness, concussion symptoms, brain fog, dysautonomia, and cognitive changes despite “normal” MRI/CT results. Bagnell explains dysautonomia as age-related weakening of autonomic brainstem control affecting heart rate, blood pressure, swallowing, and other functions, and emphasizes that brain function can be strengthened to improve balance, cognition, and quality of life. He describes noninvasive diagnostics focused on function, including precise eye-movement tracking with specialized goggles, vestibular testing using a rotary chair, and EEG brain mapping to assess brainwave power and connectivity. He outlines individualized, largely nonpharmaceutical neurorehabilitation (including targeted exercises and stimulation options), discusses typical program length, self-pay costs, and highlights sleep as foundational for brain health. He shares how to learn more via the Bagnell Brain Center website and social channels.

CenterWell Comes to The Villages: Dr. Sanjay Shetty on Senior-Focused, Value-Based Primary Care
In the Season 8 premiere of Villages Vitality: Senior Life Unscripted, host Mike Roth interviews Dr. Sanjay Shetty, president of CenterWell, following Humana’s purchase of The Villages Health and the rebrand to CenterWell Senior Primary Care. Shetty explains CenterWell’s scale (about 400 locations in 15 states serving roughly 600,000 patients) and its senior-focused, value-based, team-based care model designed to improve outcomes and help people “live longer well.” He confirms CenterWell in The Villages is not currently accepting traditional/original Medicare, instead partnering with multiple Medicare Advantage plans, and he is unsure about specialty care coverage details. The conversation covers access and appointment timing, longer average visits (about 40 minutes), behavioral health and depression screening, fulfillment research using patient surveys, proactive prevention and evidence-based screening, care coordination with specialists and hospitals, post-discharge follow-up, home health services, and Alzheimer’s screening and support.

NRLN’s Bill Kadereit on Medicare Open Enrollment, Social Security Cuts, and Senior Advocacy
Season eight of Villages Vitality Life opens with host Mike Roth interviewing Bill Kadereit, chairman and CEO of the National Retirees Legislative Network (NRLN) and chair of the American Retirees Education Foundation (AREF). Kadereit explains NRLN’s nationwide, nonpartisan advocacy focused on retirees’ income and healthcare security, including pensions, Social Security, Medicare, prescription drugs, and taxes. They stress why seniors must watch Medicare open enrollment as healthcare costs accelerate and Medicare Advantage plans are being canceled, creating “guaranteed issue rights” situations where affected members must request the “golden ticket” to switch coverage without medical underwriting. Kadereit warns Social Security reserves may be depleted by 2032, leading to an estimated 22% benefit cut, and says Medicare’s HI trust faces similar risk around 2035. Proposed fixes include removing the payroll tax cap and reducing large Medicare Advantage rebates to insurers. He directs listeners to NRLN.org and AREFpodcast.org.

Brain Savers and the New Dementia-Prevention Paradigm with Neurologist Paul Bendheim, MD
Season eight of Villages Vitality Life: Seniors Life Unscripted features an interview with Paul Bendheim, MD, clinical professor of neurology at the University of Arizona College of Medicine–Phoenix and founder of BrainSavers, an evidence-based, multimodal brain-and-body fitness program aimed at reducing Alzheimer’s risk. Bendheim explains how the FINGER trial (about 1,200 participants) and the US POINTER trial (over 2,000, with diverse populations) shifted the old “inevitable decline” dogma by showing cognitive benefits from structured lifestyle interventions, with instructor-led groups outperforming self-directed approaches. He describes Brain Savers’ instructor-led, twice-weekly curriculum combining relaxation, cognitive-movement activities, physical exercise, memory techniques, and rotating lessons across six lifestyle pillars, emphasizing social connection. The discussion covers normal vs concerning forgetfulness, starting exercise from a sedentary baseline, treatable Alzheimer’s mimics, limited but real effects of approved monoclonal antibodies, vascular dementia overlap, neuroplasticity/cognitive reserve, and becoming one’s own “healthy brain quarterback.”

Season 8: Dr. Sandra Kaufmann on Cellular Aging, NAD, Exosomes, and a Simple Supplement “Panaccea”
In the Season 8 premiere of Villages Vitality Life: Senior Life Unscripted, host Mike Roth talks with Dr. Sandra Kaufmann, a longevity medicine physician and author of The Kaufmann Protocol: Why We Age and How to Stop It and Aging Solutions, about aging from a cellular perspective and how to slow it through proactive, personalized strategies. Kaufmann explains her “seven tenets of aging,” why there is no single magic bullet, and why aging begins as early as 30–35 as key pathways and hormones decline. She outlines practical starting points (mindset, diet, exercise, addressing basic medical problems) and highlights NAD precursors (NR or NMN) as an accessible over-the-counter supplement to support energy and DNA repair. The conversation also covers tiered approaches to medicine, cancer risk as DNA repair failure, the role of peptides as accessories, and exosomes as a lower-risk, more effective regenerative option than stem cells. Kaufmann closes with her five-supplement “PANACCEA” stack (pterostilbene, astaxanthin, NAD precursor, bioavailable curcumin, and carnosine) and shares how to learn more via kaufmannprotocol.com and kaufmannlongevity.com.

Unlocking Prostate Cancer Secrets with Dr. Stephen Scionti
Prostate Cancer Diagnosis and Modern Focal Therapy Options with Dr. Stephen Scionti
Season eight of Villages Vitality: Senior Life Unscripted opens with host Mike Roth interviewing Dr. Stephen Scionti, a board-certified urologist and founder of the Scionti Prostate Center, about modern prostate cancer diagnosis and treatment. Scionti explains diagnosis begins with a PSA blood test, followed by prostate MRI to assess enlargement and identify suspicious lesions, using MRI as a roadmap for biopsy. He recommends MRI-fusion targeted biopsy—preferably transperineal rather than transrectal—to improve accuracy and reduce infection risk. Treatment depends on risk: low-risk cancers may be monitored with active surveillance, while intermediate cancers may be treated with focal therapy to preserve urinary and erectile function. He outlines focal options including cryotherapy, HIFU, and MRI-guided TULSA, discusses candidacy (often Gleason 7, prostate-confined disease, sometimes with BPH), coverage differences between traditional Medicare and Medicare Advantage, and improved drug options for metastatic disease.
The TULSA Procedure is currently available at more than 50 centers across the U.S., including several in Florida. Learn more at www.tulsaprocedure.com.

Humana Foundation Report: The State of Emotional Health for Florida Seniors
Season eight of Villages Vitality Life features host Mike Roth interviewing Danielle Nevilles McGrath, Chief Impact Officer of the Humana Foundation, about the foundation’s focus on seniors, K–12 children, and veterans through emotional health and nutrition initiatives. McGrath explains the foundation’s national scope, with most grantmaking in Kentucky, Florida, Louisiana, and Texas, and highlights a Florida report analyzing public state and national data plus interviews with seniors and nonprofit partners. Key findings include nearly 1 in 8 Florida seniors diagnosed with depression, 1 in 12 experiencing frequent mental distress, a 16% rise in hospitalizations due to mental disorders (2022–2024), and senior suicide rates above the national average, highest among those 85+. Contributing factors discussed include financial insecurity, loneliness, mobility/transportation barriers, caregiving strain, and limited access to providers; recommendations include prioritizing seniors, expanding screening, strengthening age-appropriate care, and scaling telehealth and technology-based connection programs.

Rabbi Ronald Roth on Myelofibrosis, Bone Marrow Transplants, and Expanding the Donor Registry
Host Mike Roth introduces season eight of Villages Vitality Life, Seniors Life Unscripted and continues a series on medical issues facing seniors with guest Rabbi Emeritus Ronald Roth, his brother. Roth recounts being diagnosed in 1978 with essential thrombocythemia that progressed in 2015 to myelofibrosis, a blood cancer involving scarring of the bone marrow that reduces blood cell production. After declining counts and limited benefit from injections, he pursued a potentially curative bone marrow transplant at Mount Sinai in 2018 using a haploidentical half-match from his son Gabe after no perfect registry matches were found; he describes hospitalization, slow engraftment, and a year-long recovery. He advises seeing specialists, supporting research, getting regular blood tests, joining support groups, and expanding donor registries via NMDP/Be The Match and Gift of Life, especially for minority groups.
