Max and Marco previously worked together at Chef’s Table earlier in their careers, and now bring their deep culinary experience and expertise from working in Michelin-starred restaurants around the world. Raised in Austria, Max most recently led the two-Michelin-starred restaurant Alois in Munich, where he was also named one of Germany’s 50 Best Chefs, and prior worked at award winning restaurants like Rote Wand and Steirereck in Austria, The Nomad in New York, and L'Auberge de l'Ile in France. A graduate from the Culinary Institute of America in 2005, Eli worked for notable NYC restaurants, including Casa Lever, Del Posto, & Torrisi Italian Specialties. He was then drawn in to Philadelphia’s Fork by award-winning restaurateur Ellen Yin, and began overseeing the kitchens at Fork, a.kitchen and a.bar, and High Street Market, as well as expansion to NYC, when his path greatly changed in 2015 as he was involved in a tragic incident while commuting between Philadelphia and NYC — an Amtrak accident where he endured a spinal cord injury. Elizabeth is widely credited with transforming Las Vegas into a world-class culinary destination. In 2002, she founded Blau + Associates, expanding it into one of the leading restaurant development and consulting companies. Along with her husband Chef Kim Canteenwalla, she operates successful signature restaurants including Honey Salt in Las Vegas and Vancouver, and Buddy V’s Ristorante on the Las Vegas Strip. Among her many accolades, she was the recipient of the 2022 Cornell Hospitality Innovator award. In 2020, she co-founded the non-profit Women’s Hospitality Initiative to develop and implement programs for women to achieve leadership positions in the restaurant industry. Barkha Cardoz, Cardoz Legacy

Today on our episode #370 of All in the Industry®, Shari Bayer is joined by Barkha Cardoz, a culinary entrepreneur, who is the Founder of Cardoz Legacy LLC, and Co-Creator of FC + B&B Masalas, as well as the Co-Founder of The Young Scientist Foundation. Born in Mumbai and raised in Bhopal, Barkha first stepped into hospitality in Mumbai at The Institute of Hotel Management, where she received her culinary training and met her husband, the late renowned chef Floyd Cardoz.  In the 2010s, Barkha worked alongside Floyd at their beloved restaurant Paowalla–which later became The Bombay Bread Bar–supervising operations and supply. In 2020 she launched a collection of masalas in partnership with Burlap & Barrel, and in honor of Floyd’s legacy. They are in every way an extension of her kitchen--each is an iteration of a spice blend Floyd and Barkha developed and used at home, to make dinnertime easier. She has a new book, “With Love & Masalas: Everyday Indian Recipes from My Kitchen to Yours” (Burlap & Barrel; 11/19/23).
