#62 Lerpwl | Building a career one step at a time

Ellis Barry is the Chef-Owner of the very popular restaurant Lerpwl at the Albert Dock in Liverpool. He's also becoming a prominent TV figure featuring on programmes such as Ready Steady Cook.  During the podcast, Ellis talked us through his journey from apprentice at Panoramic 34, all the way through owning his first cafe to where he is now. He explains that he has had never had a multi-year plan for his career, but instead, been keen to take opportunities as they come.  We also heard about some of Ellis's thoughts on the industry including his passion for 'eating your postcode', using high quality produce wherever possible and the important of educating everybody about good food.

The ‘Taste Liverpool Drink Bordeaux’ food festival took place from 2-5 June to coincide with the Queen’s Jubilee Celebrations. Described as ‘the most delicious weekend of the year’, the new food and drink festival, in collaboration with the Bordeaux Wine Council and the French Government, celebrates Liverpool as the UK’s host city for Bordeaux Wine Festival in 2022. As part of the festivities, The iconic 'Bombed Out Church' was the perfect venue to host chef demonstrations across three days from 3-5 June.  On each of those days, An Hour With An Indie Host, Liam Jones, recorded a live podcast, interviewing each of the chef's on stage after their demos. This episode is a roundup of the interviews from day 3 at the chef demo area.

Andy Jones is the host of The Cafe Hustle Podcast, a new and popular hospitality podcast. Andy has a fairly diverse background having worked in several industries, but most recently within the coffee shop sector having opened his own venue a few years ago.  The glue that ties all of Andy's experience together is his training and passion for leadership. Many of the conversations which Andy has with his podcast guests, focus on leadership within the hospitality sector. During the episode, I spoke with Andy to hear about the lessons he's taken from those conversations and what he thinks of about leadership within the industry right now. 
#60 Megan McGee | Hospitality improving mental wellbeing

Megan McGee is a Mental Health Practitioner at A&E for the NHS.  Megan came on to the podcast to talk a to us about mental wellbeing during mental health awareness week.  Megan has had her own mental health challenges with bipolar and has found that spending time in coffee shops has been very beneficial for her wellbeing at times when she's needed it most. During the podcast, Megan talks us through that process, explains what it is about hospitality that can help those suffering and also provides some more more general advice for improving mental wellbeing.

Jack Wanless runs Bone and Block, based inside the Duke Street Market in Liverpool and is part owner of the neighbouring business, Kelp.  During the podcast, Jack spoke to us about developing team members. Jack is clearly very passionate about helping his colleagues be the very best that he they can be, not just to move the business forwards but also out of genuine interest and care for others.

Christian Anderson is a Co-Founder of Doogles Donuts.  He started the business with his partner, Grace, in lockdown and hasn't looked back since.  This is Christian's first business, he also had very little experience of the food and drink industry so there have been plenty of learning curves along the way but one thing which was very important to Christian was building a strong team and it's the strength of the team which has helped him carry on when things got tough.  Christian is focussed on building a team which can help him develop the business but can also be developed by the business. He's very focussed on ensuring his team are happy, healthy and have opportunities to grow alongside the business.

Lucas is the Founder of Queens restaurant in Liverpool. The bistro opened a few years back and has become a hidden gem of sorts - or at least that was the case until a recent positive review from Jay Rayner.   The Guardian Food Critic recently visited Queens and wrote a review which has propelled the business into the consciousness of foodies all over the area. Lucas came on to the podcast to talk about the review and what it has done for his business. We also touched on some industry topics such as rising costs and developing a strong team.

Aaron Lee is the Founder of South Manny Flavaz, a street food concept which has exploded onto the food and drink scene in Manchester over the last few years.  Aaron started the business cooking with friends at home and before he knew it, he was managing over 80 employees across 8 venues and was delivering catering operations for other businesses. Over the last year, Aaron has realised many things about managing his business better and managing himself better.  This episode is a fantastic reminder, that leaders must protect their own wellbeing as they grow their business. During the podcast, Aaron talks through us through the very honest and authentic journey which he is now on to prioritise his own health, a lesson we could all do with hearing.

Talia and Kayleigh Baccino are the Owners of Pasta Cosa in Liverpool. The pair started the business six years ago with the aim of offering high quality, fresh pasta in a speedy and more casual environment. Neither came from a food or drink background, so over the six years, they have learned a lot of hard lessons in how to bring a fresh new concept to market and operate it successfully. Having come through a tough first couple of years and adapting to survive the COVID19 pandemic, Talia and Kayleigh have shown amazing courage, resilience and creativity to develop their business in many ways. During the podcast, they share some of those lessons with us, some of the things which they would have done differently and some of the ideas which they got right first time.
